To prepare; You will need:
- 1 kg of potatoes
- 3 eggs
- 1 cup of gluten-free flour
- 1 cup of Treat Me Gluten Free Plain Breadcrumbs
- 2 cups of oil for frying
- 1 tsp Salt and black pepper
- Dried spices or herbs (to taste)
Method:
- Boil the potatoes until they are fully cooked. Drain, peel then mash.
- Add salt, black pepper, and spices to the potatoes and knead them.
- Shape the potatoes into fingers and place them in the freezer until completely frozen.
- Distribute the flour, eggs, and rusk on 3 separate plates.
- Take the amount of potatoes you need out of the freezer and heat the oil over high heat.
- Dip the potatoes in the flour until it is completely covered, then in the eggs, then in the breadcrumbs.
- Fry potato croquette in hot oil until golden.
- Take the croquettes out of the oil and place them on kitchen paper to get rid of excess oil.
