You can divide the Pancake Mix to use it twice, according to the following recipe:
Half the quantity (to make 8 pancakes):
- One cup of the pancake mix
- 1 tablespoon liquid sweetener (honey or maple syrup)
- 1 tablespoon oil
- 1 cup milk (or plant-based milk)
Full quantity (16 pancakes):
- Full bag of the pancake mix
- 2 tablespoons liquid sweetener (honey or maple syrup)
- 2 tablespoons oil
- 2 cups milk (or plant-based milk)
How to prepare:
- Mix the liquid ingredients and then add them to the pancake mixture
- Mix the ingredients until the mixture becomes homogeneous – don’t over mix it, then leave it for 5 minutes
- Prepare a frying pan on medium heat, brush it with some oil
- Pour about 1/4 cup of the mixture into the pan and leave it until bubbles appear on the surface and the edges begin to dry
- Flip the pancake on the other side until the pancake turns golden
