Ingredients to make granola cookies
Wet ingredients:
- 4 tablespoons of unsalted butter at room temperature
- ½ cup of nuts butter (I used almond butter)
- ½ cup of light brown sugar
- 1 large egg
- 2 tablespoons of milk (or vegan milk)
- 1 ½ teaspoon of vanilla
Dry ingredients
- ½ teaspoon of ground cinnamon
- ¼ 1 teaspoon of salt
- ¾ cup of gluten-free flour
Additions
- 1 cup of granola (I used a mixture of Original Granola and Almond Granola in this recipe)
- ⅓ cup of mini chocolate chips
- ¼ cup of dried cranberry or other dried fruit according to your choice: raisins or chopped cherry, dried apricots chopped
- ¼ cup of sliced nuts according to your choice: pecans, almonds, or nuts (I used almonds)
Steps for making perfect granola cookies
Step 1: Heating the oven
Preheat the oven to 170 ° C. Prepare the baking tray by adding parchment paper or a non-stick silicone sheet.
Step 2: Preparing cookies
- Mix the butter, nuts, butter, and brown sugar at a medium speed for two minutes until the mixture becomes light in color and well-mixed.
- Scrape the sides of the bowl, then add the egg, milk, and vanilla, and mix until the ingredients are mixed well. Stop from time to time to scrape the bowl as needed.
Step 3: Add the dry ingredients
- Sprinkle cinnamon and salt over the wet mixture.
- Add the flour gradually, and mix at a low speed until the dough is mixed and no flour remains dry.
Step 4: Additions
Add the granola, mini chocolate chips, and dried cranberries, and gently mix with a spoon or at the lowest speed of the mixer.
Step 5: Form the cookies
Divide the cookie dough using a spoon or ice cream scoop. Use your fingers to gently flatten all cookies, as they will not expand much during baking.
Bake the cookies with granola for 10 to 13 minutes, until their edges are slightly brown and soft in the middle. Avoid over baking to avoid dryness.
Let the cookies cool on the baking tray for a few minutes before moving it to the cooling wrack to cool completely.
