Gluten-Free Vanilla Cake with a Sweet Strawberry Twist

Using Treat Me Gluten Free’s gluten-free vanilla cake mix, you’ll get a light, fluffy cake bursting with natural flavors. The best part? You can bake it as a whole cake or turn it into individual cupcakes and decorate it just the way you like.
Ingredients:
- 1 pack of gluten-free vanilla cake mix
- 3 eggs
- 3/4 cup milk (dairy or plant-based)
- 1/2 cup vegetable oil
- 1 cup chopped strawberries
- 2 tsp strawberry jelly
- 2 tbsp freeze-dried strawberries (crushed)
- 1 tsp beetroot powder (for natural color) or red food coloring
For the strawberry sauce:
- A splash of milk
- Fresh chopped strawberries
- 1 tsp strawberry jelly
- A few freeze-dried strawberries

Instructions:
- Preheat your oven to 180°C and prepare a baking pan by greasing it or lining it with parchment paper.
- In a large bowl, mix the vanilla cake mix with eggs, milk, and oil until smooth.
- Add strawberry jelly, freeze-dried strawberries, and beetroot powder, mixing until the color and flavor blend well.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared pan or muffin tins if making cupcakes.
- Bake for 30–35 minutes (20–22 minutes for cupcakes) or until a toothpick comes out clean.
- To prepare the sauce: mix the milk with fresh strawberries, jelly, and freeze-dried strawberries, then place it in the fridge to set slightly.
- Let the cake cool slightly, then drizzle with strawberry sauce and garnish with fresh strawberry slices.
Serving & Decoration Tips:
- Top with whipped cream, shredded coconut, or a dusting of powdered sugar for extra flair.
- Replace strawberries with seasonal berries like blueberries or raspberries..
