  • 125 g white sugar

Instructions

  1. Heat a wide skillet over medium heat and toast the semolina, stirring continuously, for 8–10 minutes until lightly golden and fragrant. This step gives Khabeesa its signature flavor, so be sure to stir constantly for even toasting.
  2. In a separate saucepan, bring the water to a boil. Add the sugar and stir until fully dissolved. Then add the cardamom, saffron, and ghee, and let the mixture simmer for 1–2 minutes to infuse the flavors.
  3. Reduce the heat and gradually add the toasted semolina to the liquid mixture while stirring continuously to prevent lumps.
